Germany’s international gourmet magazine awards top spot to Austria’s best
In German speaking Europe the magazine ‘Der Feinschmecker’ is unrivalled for its standing as an opinion leader in all matters gourmet. To be chosen as Chef of the Month is aspiration, achievement, honour and distinction – a truly important career moment for a chef. In the February ’13 issue of the magazine this seminal moment has arrived for Simon Taxacher and his team at the Restaurant Rosengarten in Kirchberg near Kitzbühel.
An ode to culinary pleasure
‘An evening at the Rosengarten with Simon Taxacher and has motivated staff does not merely have something to do with pleasure … it is pleasure, and undiluted pleasure at that’. This quote is the euphoric summary of the article – indeed an ode to culinary pleasure.
Author Joachim Becker praises Chef Taxacher’s art and his enthusiasm to experiment without bias and with ingredients not normally used in the world of top rated restaurants. Becker recognises the immaculate composition of each dish and is hugely impressed with the importance which is given to every single product ‘Each component is like a different hue, coming together in a precisely balanced painting for the senses’.
The article gives attention to the warm ambiance and the refined overall staging in the restaurant. Becker notes that …‘the tables are perfectly lit as if they were small stages’ – exquisite tableware, glasses, porcelain and food join and reveal exactly the extraordinary experience which Taxacher wants his guests to have.
‘I cook for my guests’
When Chef Taxacher is given the word, he describes his endeavour to add new dimensions to the classic cuisine and that – of course – the guest is at the very core of everything he does. Feedback is of quintessential importance to him: ‘I do not believe in going from table to table in the restaurant, but I am at the door when they leave the Rosengarten’.
